Oregon summer salad with salmon
from Run Fast, Eat Slow

I have been reading a lot about the MIND diet, a combination of the DASH  and Mediterranean diets, which is shown to slow brain aging by 7.5 years. Although this recipe isn’t from a MIND cookbook, it includes the right ingredients :  salad greens, blueberries, salmon broiled with olive oil, grilled asparagus,
pecans, balsamic vinegar dressing, and goat cheese.

For nature’s beauty just out my front door
Vibrant leaves

Berries in abundance

 Time to make some cards

and mail off to friends

  1. This is a great idea of a mind diet. it is important to take care of our brain, isn't it? Seems like there are diets for the heart and for weight loss and weight gain, so it is time to think about the brain. And pretty fall views too. Your card and that sketched envelope are beautiful. Have a great Thanksgiving Nan. Hope it was a happy T day and have a great week ahead. Hugs-Erika

  2. Your meal certainly looks wonderful and I am glad you have focused on the brain. We often overlook that when dieting or eating healthy. I could eat that meal you shared any and every day. It sure looks tempting.

It's beautiful where you live right now. I love the leaves and the berries that make everything look like autumn. A beautiful card, too, Nan. You make lovely ones.

Thanks for sharing that delicious meal, your nature areas, and your beautiful card with us for T this Tuesday, dear,. Happy Thanksgiving to you, too.

  6. That salad looks and sounds delicious! I read about the MIND diet awhile ago, and have always liked the Mediterranean diet. Off to check out MIND again. We had a couple inches of snow this week which took many of the colorful leaves off the trees. The leaves on your card are lovely!
